1. Vegan cheesecake
It is actually a yogurt cake because we have substituted soy yogurt for the cheese. Of course, if you make your own vegan cheese, you can use it to make this recipe.
Ingredients
200 ml of vegetable milk
3 soy yogurts
1 tablespoon agar-agar powder
3 tablespoons of lemon
12 thick cookies
50 g margarine
Jam (your choice)
Elaboration
Start by preparing the base of the cake. To do this, roll over the cookies until they turn into crumbs . Reservation.
Melt the margarine in the microwave and pour it over the cookie crumbs. Mix well.
Butter a mold and place the cookie and margarine mixture inside, squashing well to form the base of the vegan cake.
Dissolve the agar-agar in cold milk , then bring it to a boil over medium heat. Stir while it boils.
Add the yogurts and lemon juice. Beat until smooth.
Pour the cream over the biscuit base and refrigerate for at least half an hour.
Place jam on top of the cream, put it back in the fridge and that’s it!
2. Muffins vegan
In this case, we use fruit and almond milk to create super fluffy muffins . Of course, you can add chocolate or not, or even opt for raisins.
Ingredients
½ cup of almond milk
4 ripe bananas
2 ½ cups whole wheat flour
1 ½ teaspoons of baking soda
½ cup coconut sugar
50 ml of extra virgin olive oil
1 teaspoon of vanilla essence (optional)
½ cup chocolate chips or raisins (optional)
Elaboration
Preheat the oven to 180 ºC with heat up and down.
Mix the flour and baking soda. Sift and reserve.
Use the blender to blend the almond milk with the bananas.
Add the milk and banana mixture to the bowl of flour. Beat well.
Add the oil, sugar and vanilla essence and stir until the dough is well integrated.
Prepare the muffin tin . Fill a third of each mold with the dough.
Garnish with some chocolate chips or raisins.
Bake for about 20 minutes.
3. Vegan pastry: Cookies with oatmeal and strawberries
Another of our favorite vegan pastry recipes are these strawberry oatmeal cookies. They are very easy to make and they taste simply delicious. Do not miss it!
Ingredients
50 g oats
½ banana
5 large strawberries
2 tablespoons peanut butter
1 tablespoon of honey
Elaboration
Preheat the oven to 200 ºC with heat up and down.
Press the ½ banana with the help of a fork and add the peanut butter. Integrate well.
Add the honey and mix again.
Pour in the oats and beat until dough is formed.
Cut the strawberries into small cubes and add them to the cookie mix.
Prepare a baking sheet with parchment paper.
Form small balls and flatten them on the baking paper.
When you have the plate ready, bake for 15 minutes until golden brown.
4. Apple pie
Our last proposal in this article is an apple pie with crunchy dough and juicy filling. Without a doubt, your mouth will water just by smelling it while it’s in the oven. Take note of the step-by-step recipe.
Ingredients for the dough
1 cup whole wheat flour
½ cup of flour
¼ cup of extra virgin olive oil
⅓ cup of water at room temperature
½ teaspoon of salt
Ingredients for the stuffing
4 red apples
¼ teaspoon ground cinnamon
2 tablespoons whole wheat flour
2 tablespoons Brown sugar
brown sugar for garnish (optional)
To brush: almond milk (optional, amount needed)
Preparation of the dough
Preheat the oven to 200 ºC with heat up and down.
Mix the dry ingredients and sift.
Add the olive oil and mix using your hands until you get a grainy dough.
Add the water and continue kneading to form a dough.
Divide the dough in two.
Butter and flour the mold.
Roll out the dough and line the mold with it . Reservation.
Preparation of the filling
Wash, peel and cut the apples into small cubes.
Add the cinnamon, sugar, and flour to the apples.
Assembling the vegan apple pie
Place the filling in the mold, on the base of the cake.
Roll out half of the dough that you had reserved. Cover the cake with it. Another option is to cut small strips of dough and make a design for an even more beautiful cake.
Brush with almond milk and sprinkle with brown sugar.
Bake for about 50 minutes until the cake is crisp and golden.
