- Four slices of pineapple.

For the vanilla ice cream
- 2 cups of liquid milk.
- ¾ cup of sugar.
- 1/8 teaspoon of salt.
- 4 yellow eggs.
- 1 teaspoon of vanilla essence or (vanilla bean).

- Rod beater (manual).
- A pan.
- Airtight bags.
- Stainless steel bowl.

Preparation
Start by arranging all the ingredients in the required measurements on the work table, so that the preparation process is easier and does not mess up the kitchen.
Vanilla ice cream
- First, turn on the refrigerator or electric ice cream maker, let it cool.
- In a pot, place the milk, sugar and salt and then with a manual mixer, beat very well.
- Add the egg yolks to the mixture, avoid having a trace of whites.
- Place the pot over moderate heat and then stir with a wooden spoon.
- Cook the mixture until it thickens a little, until bubbles begin to appear around the liquid and a film of fat or cream forms on top.
- Then remove from the heat and let it cool completely.
- Put the mixture in the ice cream maker container, turn it on, and then process according to the manufacturer’s instructions, until it has the consistency of ice cream. An average of 60 minutes.
Caramelized pineapple
- Now we are going to make the caramelized pineapple. Take the pineapple slices to a pot along with the sugar, brandy, and also spices (optional).
- Let the mixture caramelize, about eight minutes over moderate heat.
- You can also do this in the oven. In any case, make sure the pineapple turns a bronze color.
- Serve the ice cream and on it place the pineapple a little warm, also put a little caramel.
- Garnish with a mint leaf.

For the vanilla

- Put lots of ice cubes or crushed ice and coarse salt in an airtight bag.
- In another smaller and airtight bag, place the vanilla ice cream mixture and stir vigorously, but avoid spilling the mixture or breaking the bag.
- Massage and shake the bag for 30 minutes and then place in the freezer for the same amount of time. However, remember that with this process it will not be the same as with the refrigerator.
Flavors
- This is the base ice cream, if you add juices or pieces of frozen fruits, you can make the ice cream of the flavor you like.
- If you add cocoa to the mixture you will have chocolate ice cream.
