Torrijas are one of the typical sweets of Spanish gastronomy. They are usually eaten at Easter but, let’s be honest, they are so delicious that you want to eat them all year long! On this occasion, we share with you a step-by-step recipe for whole grain vegan torrijas without sugar!

We have called them vegan torrijas because they do not contain eggs or any food of animal origin. But of course, everyone can eat them, and in fact, we encourage you to do so. As they do not have added sugar or eggs, they are a much healthier option than traditional French toast.

These torrijas are just as rich and soft as the original ones. However, their fat content is much lower and they can be perfect, not only for people who follow the vegan diet, but for those who suffer from a food intolerance or simply want to take care of their health.

Almond milk

The main ingredient in this recipe is whole wheat bread, that is, made from whole wheat flour. This is a source of fiber and complex carbohydrates, in addition to providing B vitamins, minerals such as phosphorus and iron, and having a very low fat content.

The traditional cow’s milk has been replaced in the recipe by almond milk and the sugar by stevia. Of course, if you wish, you can avoid sweetening the torrijas (after all, almond milk already adds sweetness) and then, bathe them with a little honey.

Nutritionally, almond milk provides between 25 and 50 calories per 100 grams and is rich in monounsaturated fats (“good” fats), as well as vitamin B6 and E, among others.

How to make vegan torrijas

Do you dare to change the traditional torrijas for these vegan ones? You won’t regret it: they are extremely healthy and really delicious. Go ahead and prepare them and enjoy them as a family.

Ingredients

  • 6 slices of whole wheat bread
  • 300 ml of almond milk
  • 1 teaspoon flax seeds
  • 1/2 teaspoon ground cinnamon
  • 1 vanilla bean
  • 1 pinch of ground turmeric (optional)
  • 100 ml of water
  • 100 ml of orange juice
  • 1/2 lemon
  • 1 cinnamon stick
  • Stevia (optional, amount required)
  • Honey (optional)

Elaboration

  1. Cut thick slices of bread, between an inch and a half and two inches thick. Reservation.
  2. In a bowl, mix the almond milk together with the cinnamon, vanilla, flax seeds, and turmeric. Beat with whisk to achieve a homogeneous mixture. Let it rest for approximately 10 minutes.
  3. Soak the bread slices in the mixture prepared in point 2 for about 15 minutes. The bread should be soaked well but not crumbled. Flip each slice every few minutes to collect liquid from both sides. If you see that the crumb begins to fall apart, remove the bread from soaking.
  4. While the bread is soaked in the almond milk, cook the orange juice with the juice of half a lemon, the lemon peel, the cinnamon and the vanilla in a small saucepan. If you want to sweeten your vegan torrijas, this is the time. Add the stevia to taste or a tablespoon of honey and mix.
  5. Cook the syrup without bringing it to a boil. The idea is only to reduce.
  6. Heat the pancha with a drizzle of extra virgin olive oil and cook the torrijas over medium heat, turning them carefully.
  7. Serve with a little syrup on top.
